Everton are also keen but Poch is in pole position to land the youngster because of his success working with young players at Spurs.
And the Londoners could make a summer bid, with the Denmark Under-21 star about to enter the final year of his contract.
Olsen has been tipped to follow in the footsteps of Spurs midfielder Eriksen and become the next Danish ace to play for a top European team.
Eriksen — a Real Madrid target — has just one more year left on his Tottenham deal.
Spurs have not spent in the last two transfer windows as they fought to get their £1bn stadium over the line.
But Poch has still guided his side to the Champions League fional in Madrid on June 1.
