The youngster has just been called up by Holland for next month's Euro 2016 qualifiers against Kazakhstan and the Czech Republic.
El Ghazi, 20 has scored seven goals for Ajax this season and had been flirting with declaring for Morocco, where his parents are from.
But coach Danny Blind has moved swiftly to offer him the chance of a first cap after playing for the Dutch at Under 21 level. El Ghazi has also been scouted by Chelsea over the past few months.
But Stoke have been checking on him regularly and are keen to make a bid either in January or next summer.
The Potters aim to continue their plans to recruit promising young players from across Europe.
Bayern Munich and Atletico Madrid have also watched El Ghazi, who is comfortable as a striker or on the right wing.
